When attacking minor fortifications there should be options for scaling ladders or mobile towers (carpentry) and siege rams (siege engineering)
Raiding - applying a torch to a thatched roof should start a fire - building takes 'X' damage every 5 seconds unless repair kits applied exceed 'X" - modified by weather - summer burns faster and winter smoulders slowly - a certain number of fire arrows should achieve the same effect. If building burns down to 50% of its durability reduced to foundations (blue print) and all contents destroyed if not removed prior to burn out.
Doors on residential buildings should be subject to damage (axes & hammers - or torches otherwise) )separate to building - allow option to build reinforced doors with a higher durability and higher resource cost
Animals - should not be able to lay in storage (warehouse & carts) without feeding - if not fed then quality degrades until dead - this promotes the laying in of sufficient feed over winter
Foodstuffs - depending on type should spoil if not 'barrelled' in salt by cook (Meat/Fish) or stored in crates/barrels by farmer (apples/root vegetables) - length of storage over 1 month(?) to be modified by skill level and quality of salt - Eggs and raw meats/fish should spoil quickly. No storage outside.
Salt - developed as mineral commodity with good value depending on quality as per above - option to manufacture with evaporation pans on beaches in summer (sell to crown)
NB In medieval times strong stone walls and castles where the 'ultimate' until the advent of siege cannon - sieges and commerce raiding where more common than pitched battles - while sieges are complex to introduce in current game play but an equivalent impact on supplies can replicated aspects of such and making supplies susceptible to spoiling introduce a strategy for antagonists
By making food production and supplies more vulnerable - burning wheat/flax fields - salting ground a means exists to attack those locked up in castles/fortifications
Wooden walls and gates should be vulnerable in some way to ammunition such as fire arrows / naphtha unless draped in wet hides (additional construction element)
Q? how to introduce water as a consumable? takes a fair while to starve and only 2-3 days to die of thirst

Allow construction of a simple construction Wood Pile to store billets only (artisan)
Introduce large capacity slow moving drays' which only carry/store felled trees or building logs - either horse drawn or bullock drawn (introduce training of 'cows' for ploughing and pulling drays/wagons
Introduce construction of pig pens and allow sheep/cows/horses to be kept in fenced/walled fields in spring/summer/winter (field may require canopy to allow or be adjacent to barn/stable) type of construction modifies number of animals held.
