This could be an interesting mini-game for handling actual groups of animals and driving them onward to wherever you want, instead of carrying papers in your pockets.
Cows, sheep, pigs, horses could be displayed in herds inside a fenced area you've built for them and remain there or in a barn. Whenever you wish to move some herd somewhere (perhaps to sell it to some lord, kingdom or village) you'd mount your horse and use your herdsman/wrangler skill and drive the herd (your chosen amount) to whichever direction you want. The more skill points you have, the faster and more accurately the herd will move. The larger the herd is, the slower it will move. The more herdsmen that help you drive the cattle, the faster they will move aswell. Riding skill could also help here on speed and precision.
To change directions you'd have to maneuver your horse more or less like it is done in real life, or something like how you do when you drive cattle in Mount & Blade for example. You have to move your position to the flanks of the herd at the opposite side you want it to turn. For example, if you want it to turn left, you must pose your horse at the herd's right flank, and vice versa. I guess that driving the cattle on foot could also be possible, but considerably less effective, given you are moving on walking speed. Maybe if they ever implement training dogs from wolves, they could also assist in that task.
This could create a whole new dynamic with your animals. You actually have the challenge to have capable riders and herdsman to drive your herd somewhere else, or actually capture wild herds spread in the landscape. This could also have an interesting feature where you can use that skill to steal cattle or horses from someone else's village, so guarding your animals is important.
