They will lay eggs. Just make sure they have food and wait. When your done wait some more. It can take a long time. It's best to fill the coop with animals so you increase your chances. You can stuff 20 chickens and hares in there. However if you fill it I don't believe they will breed at all.(no room).
You can slaughter them in the coop with lvl 0 Procurment, so you will need lvl 30 Animal Lore.
The Best way I've found to raise Animal Lore when you start out, is stuff the coops and clean and harvest them every three days or so. (in game)
