I'd think it should be both in my opinion. Snaring is still going to be a better way to get a good number of them however. In about an hour you can make 10-12 snares, and in a couple more hours have 5-6 of each.
They reworked coop breeding recently. In my 100q mat 100 construction skill coops, with 4-5 100q age 5-9 coops, I rarely go a breeding cycle where I don't get at least 2 new births (twice now I've gotten 5 out of 5).
It "feels" a lot better than pre-patch. Quality matters when it comes to materials you put into your coops (boards, plant fiber, and nails), as well as construction skill when built. Chicken/Hare quality matters during the breeding cycle and effects the chance to breed. Weather still seems to have an effect, as the 5 out of 5 new birth breeding cycle was during a cloudy period.
Make 5 coops with best quality materials you have. Throw 4 at a time similar aged chickens/hares into a coop. Then when you get new births, pull them out and save them until you have 4 chickens or hares of 0 age, then put them in an empty coop.
Eat good food (tech level 4 or 5, "expert or master") to get food qual multiplier up to 3-4. I use Fish Stew or Stuffed Rabbit now.
You'll be at 90 even with 1.0 skill (which my server is set to) in about a week of emptying eggs/dung with just the coops. Remember to remove your chickens/hares any time you log out for an extended period of time.
With the barns, I have no advice for you yet, I haven't built a normal one, just the Wooden Barn, and it's still busted at the moment (no management option). Will advise on those when I get there.
