The omelet recipe in game uses milk. I guess now we know which side the Devs are on in the whole "use Milk or Water" omelet debate.

Why would you use water or milk ? To make an omelet you just need a raw egg, you mix its inside in a bowl or something, and then you simply cook it. Why would you need water ? Maybe need butter, makes omelets better.

Adding water or milk (or both) makes the omelette more fluffy. It is the way they trap bubbles better than whites and yolks. Give it a try.
