I am just curious what the difference between tunneling (terraforming) and mining for ore is? I can get ore and rock from both but what makes one better than the other for either task?

"Mining" action is faster (usually), increases your Mining skill (and also the QL of the ore you get) and repeats automatically.

Follow up question: What attribute makes stamina degradation slower? i.e. Use less Soft Stamina per mining session?

None. But you can increase your max stamina with Willpower attribute.
