I have been in areas of the map where most of the trees are hardwood, others where it seems like a 50/50 split. I too had trouble a few times trying to find enough softwood in an area to level up certain skills. I would suggest moving to another part of the map. A good 5 minute walk/run should get you to where there are more variety of trees.

Is it a public server that has been around for a while?

I've never seen a new world without far more Hard than Soft woods, but there should be some anywhere there are trees.

That is, unless people are chopping the softwoods and not planting new ones....

Ironically, right after posting this I found a few pine. I immediately picked about 20 sprouts and planted a nice grove of them. And as soon as I did that, other trees were unlocked.
Go figure.

I recommend pulling sprouts from the types of trees that are not near your "camp" and bringing them back home to plant.

I couldn't find any apple trees at first, but when I did I planted about 50 around my shack so I wouldn't starve again.

Well yeah that's basically what I did. I didn't even set up a base yet at the time. But like I said the problem took care of itself, I just didn't know at the time what was going on.
