I read the Wiki entry for Big Stone House and it said that it can be home to 10 players at the same time. If I build one and make it my home, can someone else come along (or 9 other people) and make it their home as well and take everything I put inside? Or do I have control over that?

Only the one who claimed the house can open the doors and go inside. To allow other players to make the house their own, you need to unclaim it for a short moment, they set it as their home, and you reclaim it.

To set the house as their home only means, it will be their respawn- and teleport point. They can not enter the house, as long as it is claimed by you.
