When you buy the game do you need to pick a server from the list to play the game? Or can you just go solo by yourself? I am not too sure about this. And are the main servers offline? Thanks!

If you want to 'join a world' you can or you can create a world and play on your own. You'll still have to be connected to steam, so technically its online, but solo.
