Hi. Can me and a friend host a private instance/server so there's no other human players? Just the two of us.

If so, how would this work (i.e. is there AI who fight you etc.?).

yes u can, just let him make a private server (or u make a private server)
create server and its a switch u gota set correct (its somewhere at the first things to set)
u can even put a pw on it so no other people can join

there is no ai ingame other than animals

So in terms of gameplay and if the AI is just not animals (and not human attackers??) does it make the game boring overall and go against what the game is about?

imo your missing the pvp part (siege and stuf is fun i think)
bhut towards the building and such no your not missing anything
